It's time to rethink what beer is. Serpent is a collaboration between Brooklyn Brewery and Thornbridge that has taken several years to pull together. At its heart, this is a Belgian-style golden ale, but the rather sizeable twist is that it has been aged in barrels on cider lees, the natural wild yeasts that ferment apples into traditional ciders. Hints of cider certainly come through on the nose, and in the mouth there's a tart, mildly funky, almost wine-like flavour. There's an astonishing depth of flavour, but remains very drinkable despite its 9.5% strength. This is a celebration of a beer.

    Light to moderate straw for the malt, light grass for the hops, funky dampness for the yeast, with notes of apple, white grapes and some ripe pear. Head is small and quickly diminishes to nothing. Color sparkling clear gold. Flavor starts lightly sweet and moderately acidic, then finishes lightly sweet and acidic, and only faintly bitter. Palate is light to medium, a bit slick, with a lively carbonation and a slightly dry finish. An exceptional fruity Sour Ale with no rough edges, just pure flavorful and easy drinking.
