Set in the rolling Somerset hills, their beers are inspired by the local terroir and use ingredients foraged locally to the brewery.
With a barrel library featuring over 600 oak barrels, they have one of the most diverse ranges of sour beers produced in the UK.
From pale-ales to complex sours, they use a wild 5th ingredient to complement their beers and to develop new flavours that push the boundaries of brewing.
We pride ourselves on producing beer using time-honoured traditions, hence our focus on using wooden barrels and foudres. It is also about using local produce, foraged ingredients and harnessing Mother Nature to inoculate our beer in our unique, Somerset terroir. Our passion for flavour sees us seeking out the perfect balance between taste and aroma, which is why our beers naturally pair so well with food
