Our Somerset heroes Wild Beer Co have teamed up with Bristol's Psychopomp microdistillery to create a divine small-batch gin inspired by their Sleeping Lemons beer. Coriander seeds, angelica and liquorice roots, lemongrass, lemon zest and lemon verbena, caper berries and preserved lemons are steeped overnight in British wheat-based neutral spirit and distilled the following day. After resting another night the spirit is diluted down to 40% abv, using filtered water and an intense liquor of caper brine, citric acid, white granulated sugar and food grade vacuum salt.  The result is a beautiful salty Limoncello aroma on a gentle, clean spirit that can be sipped straight from the glass.

Less than 200 cases were made on the first run and only a small portion made their way to us, so supply is severely limited!

This is beautifully refreshing poured over ice and topped with lemonade. Although the ABV is high it remains light and fruity.

Who would have thought that making beer = making gin. But I suppose when you are as good at making great bee as Wild Beer you could also have a go at making gin. This gin is a real triumph, it has all the salty sour lemonyness of the beer that inspired it. It is a grown up no nonsense gin making the most of all those big lemon flavours. The slightly salty sour taste is great in a G+T and as a Martini!
