This beer starts life as a saison, and is then moved to wine barrels for aging. Papaya and guava are added and it is aged for six months. As is common with Wicked Weed beers there is a little funky farmyard on the nose, but lots of soft tropical notes too. Not dissimilar to a white wine, an oaked chardonnay perhaps. The tartness is not too heavy, and those lovely tropical notes really shine through.
In 2009, Walt and Luke Dickinson sat at a craft beer bar and talked about the dream of opening their own brewery focusing on big, West Coast hoppy ales and authentic Belgian ales brewed to inspire those who drank them. There would be no looking back.
