This very light caramel/crystal malt by Weyermann maltings of Germany goes by the name of Carapils® in Europe. In the USA and Canada, this malt is known as Carafoam®, because the name Carapils® is owned by Briess maltings of Wisconsin. Its purpose is to provide a fuller body, greater head retention and better foam, and can be included as 5-10% of most recipes - but can go as high as 40% for specialist beers. Great for lagers, light beers and low-alcohol brews.
