Fermented and aged in Foudre’s, a large peculiarly-shaped wooden vat used to age wine, this beer has certainly picked up some of the previous occupant’s airs and graces. Part of Jackie O’s sour program, which started life in 3 carboys with a few smack packs of culture but has now ballooned to 400+ plus barrels, Elle really is the bell of the ball and she really demonstrates the 10 years of dedication and knowledge the guys at the brewery have put in. It pours clear and pale with a distinctly tart aroma, think apple and lemon. The taste is exquisite, lightly spicy and with some lemon coming through. It’s all topped off with just the right amount of bubbles putting you in the mind of a celebratory champagne or prosecco. One to pop open when there’s good news to celebrate, this beer will match any bottle of champers!
