Complexity is good, sometimes, but there’s also an elegant beauty to be found in simplicity and Founders, the masters of complex and deep beers, understand this. Sometimes less is more, as is the case with their Mosaic Promise. Made with only Golden Promise malts and Mosaic hops, you would think that such a beer might lack depth or character, and you’d be wrong. The aroma is mildly sweet with tropical fruits dominant and some citrus backing it up. To taste, it’s clean and crisp, a little syrupy almost. The malts come first and are prominent and sweet. Next come the hops which are tropical and citrusy and there’s a clean bitterness balancing it all to round off this delightful brewer’s ode to simplicity.
Originally brewing middle-of-the-road beers for a wide and not-terribly-engaged audience, Founders realised that they’d have to change if they wanted to survive. They started making bold and complex beers instead, launching themselves to craft beer fame.
From coffee-infused Breakfast Stout, bourbon barrel-aged Backwoods Bastard and a 15% barleywine called Bolt Cutter, you can’t accuse Founders of being dull. As well as brews that push the boundaries, their lower abv. range is a more accessible introduction and includes the excellent All Day IPA.
