One of several breweries based in Cologne, Sion makes an excellent version of the region’s own drink, Kolsch. Defined by an agreement between the city’s brewers, this beer is warm fermented at around 13 to 21 degrees, then lagered or conditioned at cold temperatures.
It’s actually a protected product and must be brewed within Cologne. For another Cologne Kolsch brewer, see Fruh.
