A travelling Dane went to Australia to study Sea Urchins and discovered his love of brewing. His name was Søren Eriksen. Moving to New Zealand inspired him to push brewing to another level and that’s just what he did. His first job was for Renaissance Brewing who after a couple of years kindly let him take up their spare capacity to brew his own beer and, just like that, 8 Wired was born!
He started with IPAs such as Hopwired but, as with all brewers, he moved onto more diverse and interesting styles and, like many brewers before him, he was eventually drawn to sours. Just like all the brewers before him who gone down the winding sour path, he became obsessed with crafting perfect sours.
Sours is what 8 Wired are known for and with good reason! Having the biggest barrel aging program in the southern hemisphere with 200 (225 litre) barrels and 7 foedres, the sour program is really hitting its’ stride now.
